One of Vancouver’s most magical dining experiences is back. Winterlust has officially returned to H Tasting Lounge (HTL) at The Westin Bayshore, running through March 15, 2026 and this season’s menu might be its most decadent yet.
Dining Under the Stars
Each of HTL’s five glittering translucent domes seats up to six guests and offers panoramic views of Coal Harbour and the North Shore mountains. These luxurious private spaces are fully heated, equipped with fresh-air circulation, and feature independent sound systems, so every table feels like its own world.

A New Seasonal Menu by Chef Andrii Olshevskyi
Under the direction of Chef Andrii Olshevskyi, HTL’s culinary team is serving a new winter menu that celebrates rich flavours and seasonal indulgence.
Highlights include:

Four premium caviar services, each paired with blinis, crème fraîche, and sour cream.

Signature seafood platters (for two or four), available chilled or hot, featuring crab, prawns, mussels, scallops, and clams.

The showstopping Thor’s Hammer — a 24-hour braised beef shank with Sherry glaze, maple-glazed carrots, and red wine jus.
You’ll also find truffle burrata with wild-harvested mushrooms, glazed boneless short rib with ruby Port glaze, and the kind of desserts that make the evening unforgettable, from a towering mile-high Mille-feuille to pastry chef Martha Ebro’s “Walk in the Forest”, a whimsical chocolate and orange mousse creation that doubles as edible art.
