Osetra, one of Vancouver’s hottest new restaurants, is closing out the year with one of the most elegant New Year’s Eve dining experiences in Vancouver, offering two seatings, premium caviar options, curated wine pairings, and a menu built around the restaurant’s signature coastal flavours.
The downtown restaurant, known for its refined seafood program and high-touch hospitality, is creating a multi-course celebration designed for guests who want a memorable way to welcome 2026.
Two ticketed seatings with premium options

Osetra will host two dinner seatings on December 31. The early seating is priced at $195 per person, while the later seating is $235 per person and includes exclusive caviar upgrades and a midnight toast. Both seatings begin with an amuse and bubbles on arrival, which sets the tone for the evening.
Guests will choose from some of Osetra’s most popular hot and cold dishes for their first course. They will then select one of three proteins for the main course. The menu offers flexibility, and diners can shape the night based on their preferences. The six seasonal sides and a dessert from the pastry program help round out the experience. The second seating also includes enhanced caviar offerings that highlight the restaurant’s namesake ingredient.
A multi-course celebration with curated wine pairings
The New Year’s Eve menu reflects Osetra’s focus on premium ingredients and refined seafood. Guests can enhance their evening with a chilled seafood collection designed for sharing or a Lobster Motoyaki main course. These supplemental additions give diners more room to personalize their night.
For guests who want a guided pairing experience, the wine team will offer curated pairings for an additional charge. These selections support the various directions guests may take with their courses and add even more depth to the menu. As a result, each table can tailor both food and wine to suit the occasion.
Perfect for early celebrations or a midnight countdown
The early seating works well for guests with later plans. It offers a full dinner and a relaxed start to the night. Meanwhile, the second seating is ideal for guests who want to welcome 2026 at Osetra. With bubbles at midnight and upgraded caviar, the experience feels festive and celebratory.
