Vancouver’s dining scene is getting a sophisticated new addition. Osetra Coastal Cuisine officially opens on November 28, and the restaurant is now accepting reservations for its first week of service. The space sits at 410 West Georgia Street, tucked into the base of the striking Deloitte Summit building.
Osetra comes from The Key Collection, the team describes Osetra as a modern seafood concept built around precision and a strong sense of coastal influence. It focuses on clean flavours, thoughtful technique, and an atmosphere designed to make guests slow down.

The menu comes from Chef de Cuisine Tim Nguyen, who takes a restrained approach to seafood. Guests can start with dishes like the signature caviar waffle, red tuna with tomato dashi gelée, or octopus served with smoked pomme purée and bravas glaze. Larger plates highlight items such as ling cod torchon with scallop mousse and a beurre blanc enriched with Osetra and Ikura caviar.

The cocktail program adds to the experience. Cocktail Director Zoe Bates and Beverage Director Shawn Jones created a list that mirrors the menu’s coastal inspiration. Drinks like the Seafoam spritz, Tide Pool margarita, and Estuary rum cocktail use fresh herbs, citrus, and subtle aromatics to bring out ocean-driven flavours. A zero-proof drink, Current, offers the same depth and balance without alcohol.
Inside the restaurant, the design leans warm and sculptural. Soft lighting, textured surfaces, and natural tones shape the room. The space feels intentionally quiet, which works well for pre-event dinners or relaxed evenings. Since Osetra sits steps from Rogers Arena, BC Place, and the Queen Elizabeth Theatre, it also serves as a convenient stop before concerts, games, and shows.

Finding the entrance may take a moment. Osetra sits on the northwest corner of West Georgia and Homer Street, and the door is slightly set back along Homer. Guests will see the glow from the dining room through the floor-to-ceiling windows as they approach.
The restaurant will open Wednesday to Sunday from 5 p.m. to midnight, and early demand is already picking up. Reservations for opening night and the following week are available now through Osetra’s website.
If this launch is any indication, Vancouver’s seafood scene is about to get a new heavy hitter.
