A pot pie combines all the great things about the holidays – spices, fall vegetables and of course, pie. This recipe consists of mixing vegetables with a can of soup, filling the crust and baking it.

Vegan Shepard’s Pie – (1 hour)

This nine-ingredient Shepard’s pie is full of hearty vegetables and lentils. Essentially, fry up some frozen vegetables with onions, garlic and herbs, make mashed potatoes and then bake for 10-15 minutes.

Stuffed Acorn Squash – (1 hour)

This recipe uses an instant pot, but you can easily cut the acorn in half and bake it for half hour. Meanwhile, make the rice, fry the vegetables and combine it all together.

Vegan Stuffing – (35 minutes)

It may be bias as a vegetarian, but the best part about Thanksgiving is not the turkey – it’s the stuffing. My advice though: add some dried cranberries to top it off.

Vegan Gravy – (15 minutes)
